When evaluating what causes cavities (caries), patients universally point to "sugar." While sugar is the fuel, the actual mechanism that destroys your teeth is purely a matter of chemistry. Specifically, it is the measurement of acidity: the pH Scale.

Tooth enamel is the hardest substance in the human body, composed of a dense crystal structure known as hydroxyapatite $\left(\text{Ca}_{10}(\text{PO}_4)_6(\text{OH})_2\right)$. Despite its strength, this crystal has an Achilles heel: acid.

The Critical pH Threshold: 5.5

The resting pH of a healthy human mouth is around 7.0 (neutral). At this pH, your saliva actively bathes your enamel with calcium and phosphate, keeping the teeth fully mineralized and structurally rock-hard.

However, enamel is biologically programmed to dissolve when the environmental pH drops below 5.5. This is known as the "Critical pH."

When you consume fermentable carbohydrates (like crackers, bread, chips, or sweets), the naturally occurring bacteria in your oral biofilm rapidly metabolize these carbs. The metabolic byproduct? Pure lactic acid. This localized acid secretion causes the pH of your mouth to plummet past 5.5 within minutes, triggering rapid demineralization. Calcium ions are physically stripped from the surface of your teeth.

Frequency vs. Volume: Stephan's Curve

Here is the most critical realization in preventative dentistry: It is not the amount of sugar you eat, but the frequency of your snacking that destroys your teeth.

Every time you take a sip of soda or eat a handful of crackers, your oral pH instantly dives below 5.5. It takes your saliva roughly 30 to 45 minutes to buffer the acid and return the mouth to a safe, neutral pH where repair (remineralization) can occur.

If you eat a large slice of cake in 5 minutes, your teeth undergo one 45-minute acid attack. However, if you slowly sip a single cup of sweetened coffee or snack on a small bag of chips over the course of three hours, your oral pH is pinned below 5.5 for the entire duration. Your saliva never has a chance to neutralize the environment. The enamel undergoes massive, irreversible structural mineral loss, leading to catastrophic cavitation.

To protect your teeth, you must master the pH scale. Drink water immediately after meals, utilize fluoride or nano-hydroxyapatite to lower your critical pH resistance threshold, and strictly limit the duration and frequency of your snacks.
